This Easy Berry Cobbler makes the most out of fresh summer fruit. It is a cinch to make, bakes while you eat, and clean up is a snap. Try it with your favorite fruit combo, top with a scoop of ice cream or frozen yogurt, and enjoy! Feeding a crowd? Double the recipe and bake in a 13x9 pan.
¼-½cupsugar(use less if your fruit is really ripe and sweet, use more if it is tart)
¼-½cup water
Batter
1stickbutter, margarine, or vegan spreadmelted
1cupflourworks with All Purpose flour or gluten free replacement flour
1½tspbaking powder
½tspsalt
½cupsugar
¾cupmilkwhole, skim, almond, or other dairy alternative of choice
Instructions
Preheat oven to 350°
Soak berries in sugar and water and set aside
Melt butter in the microwave if desired. I melt it directly in my 8x8 glass baking dish.
In a mixing bowl, combine flour, baking powder, salt, sugar and milk. Stir to combine. Pour batter evenly over butter in the baking dish.
Spoon berries evenly over flour mixture. (Don't pour it all in at once as there may be too much liquid in the berries.) Do not stir.
Bake 40 to 45 minutes. Makes 4 to 6 servings.
Notes
This recipe serves 4-6 people. If you want double this recipe to serve a crowd, bake it in 13x9 pan. To make ahead of time, prepare the cobbler and refrigerate until ready to bake. If the cobbler is baked cold and straight from the refrigerator, add a 5-10 additional minutes baking time, or until the top is golden and the fruit is bubbly.
