This garlic and herb celebrates fresh herbs of the season and gives great flavor to chicken or pork. It can be made ahead to allow the flavors to marinate, or grilled immediately. The amount of garlic and herbs used depends on the amount of chicken you are using and your own taste buds!
Mix herbs and garlic together in a pile on the cutting board
Add a generous amount of salt and pepper, and mash it into the rub with the side of the knife
Drizzle olive all over the herbs and garlic and mix together
Rub on chicken
Grill immediately, or store in a ziploc in the fridge until ready to grill.
Notes
I've left off the amounts as this recipe is very forgiving. Grab a handful of basil, 4 or 5 sprigs of thyme and one or two springs of rosemary. It really depends on your own taste buds! We love to go heavy on the basil and garlic. This recipe can be used on any type of chicken. It also makes an amazing rub for pork tenderloin as well.
