1 ½poundsweet potatoes, peeled and chopped smallapproximately 2 large, 3 medium or 4 small
1-2apples, chopped
1largeonion, chopped or two small onions
1 - 1½tspcinnamonto taste
1 tspkosher saltto taste
2tbspolive oil or spray with olive oil mister until coated
Instructions
Place peeled, chopped sweet potato, peeled (or unpeeled if you prefer) apple, and sliced onion on a oiled/cooking-sprayed sheet pan.
Toss with cinnamon, salt, and olive oil. You can do toss together in a bowl for an even coating, or you can toss it right on the sheet pan.
Roast at 400° for 30-45 minutes, depending on the size of the potatoes.
Notes
I'll admit, I do not normally measure anything when I make this dish. I dice my sweet potatoes, apples and onion, spread them out in a pan, drizzle with olive oil, and shake kosher salt and cinnamon on top. Easy peasy!
