Sausage and broccoli are sauteed with loads of sliced garlic for a delicious variation on a traditional broccoli rabe recipe. Serve with bread or pasta and watch it disappear!
Steam broccoli by placing it in a microwave safe dish with a bit of water. Cook for 5 minutes. Alternatively, you can par boil the broccoli in boiling water for a few minutes.
Drizzle olive oil in a pan. Add crushed red pepper to the hot oil.
Add onions to the pan and cook to soften.
Squeeze chicken sausage out of its casing and into the pan with the onions and break it up into bite sized pieces.
Add sliced garlic to the pan. Don't let things dry out. Keep adding olive oil as needed.
Add broccoli to the pan continue to cook so all the flavors come together.
Saute everything for a few more minutes, adding salt and pepper to taste. Add more crushed red pepper if you like more heat.
Top with grated cheese.
Serve as is, over pasta, on a toasted buttered roll, or with your favorite bread.
