Roasted Veggie Pasta is my go-to dinner option when I want a quick, healthy meal. Take your favorite veggies, roast them at high heat with olive oil, and layer them with spices. We love the combination of broccoli, onion, thinly sliced garlic, crushed red pepper, garlic powder, salt and pepper together. Toss the roasted veggies with your favorite pasta. Our go to pasta is red lentil penne, made from just one ingredient, red lentils. It’s loaded with plant-based protein and fiber, and is naturally gluten free. If the pasta and veggies seem dry, add more oil and/or some pasta water to make more of a “sauce”. Top it off with some cheese, and dinner is done!

This is a delicious one bowl vegetarian meal, but it also makes a great side dish. We usually grill boneless skinless chicken breast or thighs with salt, pepper, garlic powder, and a drizzle of olive oil. The whole meal, even with additional grilled chicken, takes about 30 minutes.

Vary the vegetables and spices to your taste buds and what you have on hand. Grape tomatoes, asparagus, red onion, peppers, zucchini, mushrooms, butternut squash, cauliflower, the possibilities are endless! Vary the flavor profile by adding lemon zest, tuscan herbs (thyme, rosemary, basil, oregano), or your favorite spice blend. Different cheeses will also add another layer of flavor to this dish. Romano, parmesan, asiago, grana padano are all excellent options. What are you in the mood for?

Roasted Veggie Pasta

For a quick and easy meal, toss your favorite veggies with olive oil on a sheet pan and roast at high heat. Load them up with spices, onions and garlic. Cook your pasta while the veggies are roasting so it all comes together at the same time. Add a bit of grilled chicken or chicken sausage if you are looking for additional protein. Top it with cheese and dinner is done.

Ingredients
  

  • 1 bunch chopped broccoli or other favorite vegetables
  • 1 large onion sliced
  • 4 cloves garlic sliced
  • olive oil to taste
  • crushed red pepper flakes to taste
  • garlic powder to taste
  • kosher salt and pepper
  • ½ pound pasta red lentil is our favorite
  • asiago, parmesan, romano cheese for topping
  • grilled chicken optional

Instructions
 

  • Chop the vegetables, thinly slice the garlic, and place on sheet pan
  • Toss the vegetables and garlic with a generous amount of olive oil.
  • Add garlic powder, crushed red pepper, salt, and pepper to taste
  • Roast at high heat (425°) for 20-25 minutes until veggies are tender
  • While veggies are roasting, boil salted water for pasta. Add the pasta and cook according to package directions
  • Grill or bake boneless, skinless chicken breast or thighs, if using
  • After the vegetables, pasta, and chicken are cooked, toss it all together with additional olive oil, a bit of pasta water, and cheese.
