When summer arrives and berries are in season, I start dreaming about Easy Berry Cobbler. This dessert comes together quickly and clean-up is a breeze. I usually make it while prepping dinner, then pop it in the oven to bake while we eat. Nothing beats warm cobbler fresh out of the oven with a scoop of vanilla ice cream or frozen yogurt.

Making the Cobbler

Start off by soaking the fruit in a bit of sugar and water. Meanwhile, melt the butter and prepare the batter. I use an 8×8 glass baking dish, and melt the butter in the microwave right in the baking dish. (If making this for a crowd, double the recipe and bake it in a 9×13 baking dish). Next, combine the milk, flour, baking powder, salt and sugar in a mixing bowl and stir with a spoon or whisk it until smooth. No need to break out the mixer for this recipe. Once the butter is melted, pour the batter over the butter evenly. Carefully spoon the fruit into the baking dish on top of the batter. Be careful not to add to much of the liquid from the berries as it can make the cobbler quite soggy. Bake at 350 degrees for 40-45 minutes.

Seasonal Ingredients

This recipe is very forgiving and works with pretty much any fruit you have on hand. We’ve used blueberries, strawberries, raspberries, blackberries, peaches, and nectarines in all sorts of combinations. Think blueberries and strawberries for Fourth of July, or peaches and raspberries when peaches are plentiful in August. Other favorite combinations for this Easy Berry Cobbler include blueberries and nectarines, and blackberries and raspberries.

The photos in this post are from our most recent cobbler. We used blueberries and fresh picked raspberries from our backyard. We have had a bumper crop of raspberries this year, and it was a delicious way to enjoy them. The sweet blueberries and slightly tart raspberries complemented each other quite well.

Serve and Enjoy!

Cobbler is best served warm and fresh out of the oven. To make ahead of time, prepare the cobbler and refrigerate until ready to bake. If the cobbler is baked cold and straight from the refrigerator, add a 5-10 additional minutes baking time, or until the top is golden and the fruit is bubbly.

Easy Berry Cobbler

Ingredients
  

Fruit

  • 2 cups fresh fruit eg blueberries, strawberries, blackberries, raspberries, peaches, nectarines
  • ¼-½ cup sugar (use less if your fruit is really ripe and sweet, use more if it is tart)
  • ¼-½ cup water

Batter

  • 1 stick butter, margarine, or vegan spread melted
  • 1 cup flour works with All Purpose flour or gluten free replacement flour
  • tsp baking powder
  • ½ tsp salt
  • ½ cup sugar
  • ¾ cup milk whole, skim, almond, or other dairy alternative of choice

Instructions
 

  • Preheat oven to 350°
  • Soak berries in sugar and water and set aside
  • Melt butter in the microwave if desired. I melt it directly in my 8×8 glass baking dish.
  • In a mixing bowl, combine flour, baking powder, salt, sugar and milk. Stir to combine. Pour batter evenly over butter in the baking dish.
  • Spoon berries evenly over flour mixture. (Don't pour it all in at once as there may be too much liquid in the berries.) Do not stir.
  • Bake 40 to 45 minutes. Makes 4 to 6 servings.

Notes

This recipe serves 4-6 people. If you want double this recipe to serve a crowd, bake it in 13×9 pan.
