Garlic and Herb Grilled Chicken
We make this Garlic and Herb Grilled Chicken at least twice a month. It really shines when you have fresh herbs from the garden, but use whatever you have on hand. Herbs, minced garlic, oil, salt and pepper are all combined for a wonderfully flavorful rub. We chop everything up on a large cutting board, mashing in the salt and pepper in to the herbs and garlic with the side of the knife to really break down the garlic. Our favorite combination of herbs includes lots of fresh basil, a few sprigs of thyme and a little bit of rosemary. It’s super simple and oh so delicious.
It works wonderfully on boneless skinless chicken thighs, and equally well on chicken breast. You can make it ahead of time and marinate the chicken in ziploc bags. This makes things super easy when you are serving a crowd. We serve this at dinner parties and cookouts because we can make it early in the day, let the chicken soak in all the delicious flavor. Then we grill it just before serving. It’s also perfect, however, when you add the rub to the chicken right before you grill it. While we usually grill, you can also bake it in the oven if the weather or an empty gas tank wreak havoc on your grilling plans. Either way, you just can’t go wrong.
We often serve this Garlic and Herb Grilled Chicken alongside Veggie Pasta, Lentil Pasta with Pesto , Veggie Stacks, or occasionally Carbonara. This chicken also makes a great salad topper. We have also used this same rub on grilled pork tenderloin with great results. The rub keeps the meat super moist and flavorful, and it complements any menu.
Garlic and Herb Chicken
Ingredients
- 4-8 cloves of fresh minced garlic amount depends on size of cloves and amount of chicken
- fresh basil, thyme, rosemary and/or parsley chopped
- heavy drizzle of olive oil
- kosher salt
- pepper
- 4 chicken breast or 6 thighs
Instructions
- Mince garlic
- Clean and chop herbs
- Mix herbs and garlic together in a pile on the cutting board
- Add a generous amount of salt and pepper, and mash it into the rub with the side of the knife
- Drizzle olive all over the herbs and garlic and mix together
- Rub on chicken
- Grill immediately, or store in a ziploc in the fridge until ready to grill.
