Roasted sweet potatoes, apples and onions is a sweet and savory dish filled with flavor. The apples and onions really complement the rich sweet potato flavor, with no need for added sugar. Roast at high heat with a bit of oil, cinnamon, and salt to bring out all the wonderful, warm flavors. Dice the sweet potatoes small so they cook up in under 45 minutes. If you prefer larger chunks, plan to cook this dish for closer to an hour.

We love to serve this alongside roasted pork tenderloin, grilled rosemary and thyme herb chicken, or spiced roasted chickpeas. We also serve this with ham on Easter and New Year’s Day. It’s easy to prepare and lighter than traditional butter and brown sugar style sweet potato casseroles. It is most definitely, however, holiday-dinner-table worthy!

Ingredients
  

  • 1 ½ pound sweet potatoes, peeled and chopped small approximately 2 large, 3 medium or 4 small
  • 1-2 apples, chopped
  • 1 large onion, chopped or two small onions
  • 1 – 1½ tsp cinnamon to taste
  • 1 tsp kosher salt to taste
  • 2 tbsp olive oil or spray with olive oil mister until coated

Instructions
 

  • Place peeled, chopped sweet potato, peeled (or unpeeled if you prefer) apple, and sliced onion on a oiled/cooking-sprayed sheet pan.
  • Toss with cinnamon, salt, and olive oil. You can do toss together in a bowl for an even coating, or you can toss it right on the sheet pan.
  • Roast at 400° for 30-45 minutes, depending on the size of the potatoes.

Notes

I’ll admit, I do not normally measure anything when I make this dish.  I dice my sweet potatoes, apples and onion, spread them out in a pan, drizzle with olive oil, and shake kosher salt and cinnamon on top. Easy peasy!
