This Sausage, Broccoli and Garlic recipe is inspired by a Broccoli Rabe appetizer we enjoyed at DiFebo’s restaurant in Bethany Beach, DE. We fell in love with the dish and decided to make our own variation using regular broccoli and chicken sausage. It’s full of flavor, and the little pools of garlicky olive oil on your plate are perfect for dipping crusty bread. We love to serve it with our favorite homemade focaccia from Sally’s Baking Addiction and a glass of Pinot Grigio.

This is an all-in-one-pot kind of dish, so make sure you use an *extra large frying pan or even a dutch oven. When I made this for a crowd recently, a large dutch oven with plenty of sauteing surface area worked perfectly.

Layering the ingredients leads to a great depth of flavor. Start with sauteing the onions, then add loads of sliced garlic. Next add sausage, and finally toss in some par-cooked broccoli. We love to use italian chicken sausage, but any italian flavored sausage will work. Spice it up with plenty of salt, pepper, and crushed red pepper. Top the saute with your favorite cheese. In our house, we love the salty flavor of Romano cheese.

Serve this Sausage, Broccoli and Garlic saute with bread, alongside or atop pasta, over rice or cauliflower rice, or all by itself. You can even pile it on to a buttered and toasted roll for a super delicious sub sandwich!

Sausage, Broccoli and Garlic

Sausage and broccoli are sauteed with loads of sliced garlic for a delicious variation on a traditional broccoli rabe recipe. Serve with bread or pasta and watch it disappear!

Ingredients
  

  • 1 lb chicken sausage, casings removed raw
  • 1 large bunch broccoli and/or broccolini, chopped
  • 8-10 cloves garlic, sliced thin
  • 1 large onion, chopped
  • olive oil as needed
  • ½ tsp crushed red pepper more if desired
  • salt and pepper to taste
  • ¼-½ cup grated romano cheese

Instructions
 

  • Steam broccoli by placing it in a microwave safe dish with a bit of water. Cook for 5 minutes. Alternatively, you can par boil the broccoli in boiling water for a few minutes.
  • Drizzle olive oil in a pan. Add crushed red pepper to the hot oil.
  • Add onions to the pan and cook to soften.
  • Squeeze chicken sausage out of its casing and into the pan with the onions and break it up into bite sized pieces.
  • Add sliced garlic to the pan. Don't let things dry out. Keep adding olive oil as needed.
  • Add broccoli to the pan continue to cook so all the flavors come together.
  • Saute everything for a few more minutes, adding salt and pepper to taste. Add more crushed red pepper if you like more heat.
  • Top with grated cheese.
  • Serve as is, over pasta, on a toasted buttered roll, or with your favorite bread.
