Simple Strawberry Spinach Salad
No time to make a salad? Think again! This is a super fast, super fresh, super delicious option. I serve it with a honey apple cider vinaigrette, but it is also delicious with a balsamic vinaigrette. We love pecans, but this is also tasty with sliced almonds as well. Feel free to toast the pecans in the toaster oven or in a dry pan, but it’s not necessary if you are trying to throw this together quickly.
This is a perfect salad for a cookout or a dinner party as the assembly is so speedy. You can slice the strawberries in advance, mix up your vinaigrette, and just toss everything together right before serving.
It also makes a great, healthy, weeknight meal. Grill up some salmon or chicken and toss this salad together while you are waiting for it to cook. Just like that, dinner is done. Simple Strawberry Spinach Salad
Ingredients
- 1 bag baby spinach
- 10 strawberries sliced
- 1/2 cup pecans toasted in a dry pan or toaster oven (optional)
- 1/4 cup crumbled blue cheese also great with goat cheese or feta
Honey Cider Vinaigrette
- 4 tbsp light olive oil or canola oil
- 3 tbsp apple cider vinegar
- 2 tbsp honey
- 1 tsp salt
Instructions
- Place in bowl or arrange on a platter. Whisk together vinaigrette ingredients. Drizzle and serve!
